Sundays

Sunday night we usually prepare quick breakfasts and snacks for the week. We're trying to eat super healthy for our well being just as much as for our waistline. The past few Sundays we have just been too tired to really cook anything so we end up scrambling through the week, but today...just look at what we made!
-spinache and smoked salmon fritatta
-peanut butter balls (recipe is a couple blog entries down)
-10 grain pancakes
-ground flax seed, carrot and raisin muffins (these are really yummy!)
-hummus (I made double so PLEASE stop by and have some!)
-ham pickle and reduced fat cream cheese rollups
-crunchy flax and parmesan crackers
-made at home mozzerella string cheese sticks (huge block of mozzerella cut up)

Phew! Now, what else should we make?

Oh for goodness' sake, is there nothing you can't do?! You are amazing, Lady, whipping up snacks and breakfasts for the whole week! I may be shamed into coming up with an actual menu for dinners this week. Maybe. :D

I'd love your recipe for those flax parmesan crackers - they sound great!
