Flipp'n good Flap Jacks


Here's my healthy take on pancakes for my kiddos (I like them, too.) They are less flour-y and more moist due to the ingredients, but my kids gobble them up just the same.

3/4 cup plain yogurt
1 egg
1/2 cup milk
1 tablespoon olive oil (you can use veg)
1/2 tsp. baking soda
1 cup whole wheat pastry flour (you can use all purpose or a combination of both)
blueberries or chocolate chips or nuts


Mix wet ingredients first and then add dry ingredients to produce a slightly lumpy but smooth runny texture. Scoop batter onto buttered griddle over medium heat. Scatter berries or chocolate chips on top (we like making fun patterns.) When pancake is bubbly, flip (approx. 1-2 minute on each side.) Serve with warm maple syrup! Makes 4 large or 8 mini.
